Slice spring onions (reserve green tops), julienne the ginger, mince the garlic, and crush the Sichuan pepper

Pat the tofu dry, cut into rectangles, and coat each piece thoroughly in cornstarch

Heat oil in a wok and fry the tofu for 2 to 3 minutes per side until golden, then remove and set aside

Sauté the garlic, ginger, and onion whites in the same pan, return the tofu, add the sauces, and simmer for 5 minutes

Remove from heat, garnish with the reserved green onion tops and crushed Sichuan pepper, and serve with white rice
