Slice chicken breasts in half lengthwise into thin cutlets, pound to even thickness; mix flour with salt and pepper in a shallow dish

Dredge each cutlet in the seasoned flour, shaking off excess

Heat olive oil and half the butter in a skillet over medium-high heat, cook chicken 3-4 min per side until golden, set aside

Add chicken broth, lemon juice, and capers to the skillet, scrape up browned bits, simmer 3-5 min until reduced by half, then whisk in remaining cold butter

Return chicken to the pan, spoon sauce over and garnish with parsley
