Instructions

Preheat oven to 160°C. Brown beef chunks in olive oil in batches.

Remove beef. Sauté chopped onion and thyme until tender. Add garlic.

Stir in flour to coat. Add water, Guinness, and bay leaves.

Scrape the bottom of the pot to release brown bits. Bring to a boil.

Cover and bake in the oven for one hour.

Add chunks of carrots and potatoes with extra water. Bake for 1.5 hours.

Remove lid for the last ten minutes. Serve with fresh parsley.
