Peel and cut the russet potatoes into 1/2 inch slices, then soak them in cold water for at least 30 minutes to remove excess starch

Drain the potatoes and dry them thoroughly with a kitchen towel to ensure maximum crispiness

Air fry the potatoes at 400°F (200°C) for 7 minutes, toss them, and fry for another 7 minutes until golden brown; set aside and keep warm

Prepare the fish coating by whisking 1/2 cup flour and all the cornstarch in a shallow bowl

In a separate bowl, whisk 1 cup flour with garlic powder, onion powder, salt, pepper, baking soda, and beer to create a smooth batter
