Instructions
Prepare the ingredients by cutting the chicken breast into bite-sized chunks, shredding the carrots, finely slicing the green onions, and mincing the garlic and ginger
Toss the chicken chunks in a bowl with cornstarch until evenly coated, which helps create a crispy exterior in the air fryer without deep frying
Place the coated chicken in the air fryer basket in a single layer and cook at 400°F (200°C) for 12-15 minutes, shaking halfway through until golden and cooked through
While the chicken cooks, whisk together the soy sauce, honey, half the sesame oil, minced garlic, and ginger in a small pan, simmering briefly until thickened into a glossy glaze
Prepare the slaw by tossing the shredded cabbage and carrots with the rice vinegar, remaining sesame oil, and half of the green onions
