
Apple Cinnamon Toast

Combine sugar and cinnamon in a small bowl, set aside. core, peel, and thinly slice half of a fuji apple. divide the butter into two 7g pieces and one 14g piece.
Melt 7g of butter in a small skillet over medium heat. add the bread slice, spin to absorb butter, then place a moderately heavy saucepan on top to press the bread firmly into the pan. toast until crisp and evenly browned on one side, about 3-5 minutes.
Remove the bread, add another 7g of butter to the pan. flip the toast and return it to the pan. spin to absorb butter and press with the saucepan again until the second side is browned. flip the toast back over (first side up) and re-toast without the weight until re-crisped and golden brown on both sides. transfer to a wire rack and sprinkle with some cinnamon sugar, reserving some for the apples.
Add the remaining 14g of butter and sliced apples to the same skillet. spread them in a single layer and brown on one side, then flip and brown the second side. add the remaining cinnamon sugar and stir until the sugar caramelizes and melts into a sticky glaze, coating the apples.
Serve the caramelized apples immediately over the cinnamon-sugar dusted toast.
