Mise en place: flatten steaks to 3/4cm thick using a mallet, slice into 5mm strips, slice onions and mushrooms, and measure sauce liquids

Season beef with salt and pepper, sear in oil on high heat for 30 seconds per side in batches until browned, then remove to a plate

Melt butter in the skillet over medium-high heat, sauté onions and mushrooms until golden, and stir in flour for one minute

Gradually whisk in beef broth until incorporated, stir in sour cream and mustard, and simmer for 3–5 minutes until the sauce thickens

Return the beef and plate juices to the pan, simmer for one minute to finish cooking, and serve immediately over egg noodles
