Instructions
Preheat oven to 175°c. dice cherry tomatoes, chop basil, and mince garlic. combine 190g cherry tomatoes, 15g arugula, 12g basil, 1g chili flakes, 13g olive oil, 5g garlic, and 1g black pepper in a bowl.
In a small bowl, mix 9g olive oil and 10g crushed garlic. spread evenly onto the sliced ciabatta rolls.
Place rolls, cut side up, on a baking sheet and bake for 3-4 minutes until slightly crisp. remove from the oven.
Add mozzarella rounds onto the ciabatta and return to the oven on a low broil for 3-4 minutes until the mozzarella is melted and slightly browned. watch closely to prevent burning.
Remove from oven, top with the prepared tomato mixture, and drizzle with balsamic glaze. serve immediately, with extra chili flakes if desired.
