Cut the pork into regular cubes, keeping the rind if using belly; slice ginger finely and crush the garlic cloves

Melt the sugar in a Dutch oven over low heat until it turns into a golden caramel without stirring

Deglaze the caramel with soy sauce, then add the pork, garlic, and ginger

Pour in enough water to just cover the meat and simmer over medium heat until the liquid becomes a thick, coating sauce
